Description of content: This technical regulation establishes the minimum requirements for the basic hygiene and food safety of bread and banquet producers. The specification applies to all bread and banquet producers. It includes guidelines for personal hygiene and behavior of bakery personnel and operational procedures, including storage and packaging of goods, transport and preventing cross-contamination. This regulation also consists of guidelines for pest control, cleaning plan (including cleaning products and cleaning methods) and design and technical maintenance.
